Out with the old, in with the new!!

Happy freaking New Year. I'm so ready for this year to be over. So this post is going to be all about the New Year, starting with an idea I stole from Lauren at mommyisrocknroll.com I <3 Lauren's blog. MOMMYISROCKNROLL/>

Decade in Review, Nerdy Momma Edition

2000- I graduated from high school, barely. I was working in a daycare. Life was simple and that was good. I lived with two friends in a Townhouse.

2001- I tried college and didn't follow thru. I was working at a Cig store and dating my boss. I became pregnant and lost it and the boss/boyfriend. I was also fired after that. It was hard.

2002- I started working at another daycare center and I met the love of my life. My parent's were breaking up. Life was bittersweet.

2003- My heart was really broken for the first time as an adult. I left the day care and went to work as a nanny for a really cool family that eventually had 3 boys. Life was fun.My parents figured things out and were back together. However my mom was battling cancer.

2004- I was still working as a nanny and trying to go to school. I was dating and enjoying being young.

2005- More of the same from 2004.

2006- More of the same. I still wasn't dating anyone seriously. I met some really interesting people. I moved in with a friend and her son while her hubby was in Iraq and then I moved out. I loved it. I also was in a car wreck that totaled my car but I was fine.

2007- This was a hard year. My mom passed away. She fought long and hard but she just couldn't fight anymore. RIP Momma. You are missed.

2008- I moved into my own apartment in Plano. I loved it! I got back with my one true love and he moved in with me in June. I left my job as a nanny and went to work at a preschool in Allen. My little sister had a baby boy.

2009- I had a baby!!!!! Moved back to my hometown. Became a stay at home mom and started this blog.

I'm so glad Christmas is over.

Wow, I am so glad. It was a nice Christmas. My little monkey was spoiled rotten. He got some wonderful gifts. However, I'm just going to talk about my favorite one and then I'm going to fill you in on other events.

Monkey's Meme gave him a Leapfrog MyPal Scout. I love this toy! I love the whole Leapfrog Monkey lights up whenever it says his name and he laughs and giggles when it sings. This has to be the best $15 to $20 ever spent on a toy. You can personalize it and change it whenever it likes. Its great. There's a boy one named Scout and a girl one named violet. Scout, the leapfrog toy, is green and cuddly. Violet, you guessed it, is purple and cuddly. You should check it out. Go to www.leapfrog.com I can get about 10 minutes of time to myself when he plays with it. He can't push the buttons on the paws yet.

In baby new, Monkey is getting his first tooth. oh boy is he cranky!!!!! It's his bottom left tooth. I'm excited and sad that my little one is growing so fast.
~ In other baby news, my sister will be having Baby K by this coming Tuesday at the latest. She was diagnosed with PIH today. I'm excited and worried about that.

Lots going on in my world lately. Some good, like baby k's arrival, and some bad like the electrical issues in the kitchen and the plumbing issues in the bathroom.

I'm looking forward to my classes that are starting on the 19Th. Hopefully, my aid comes through quickly. I can't wait to get my CDA or AA.I'm not sure which!

I'll write again soon but I'm going to log off with this quote that I love.

You cannot do a kindness too soon, for you never know how soon it will be too late. ~Ralph Waldo Emerson

I am Lame!

As in not cool and very dorky. I went out to dinner with a friend to celebrate her birthday. Scout stayed with his Meme so that C and I both could go. The birthday girl was drinking all the other "party-goers" were drinking, C and I weren't. In fact, I had a good time. I love my friends but I just couldn't wait to get home and cuddle up with my son and my honey. Apparently, the real party started after I left when everyone moved to the bar.

Now, what exactly makes me uncool? The fact that I was home by 10 and in bed by midnight? The fact that a drank hot coco before bed? Is it that once I got home I got into my PJ's and big fuzzy socks? Yup, my guess is that is all of the above! And I'm okay with being uncool me because I love being Scout's momma. :)

Enough about me, let's gossip!!

I am so sick of hearing about Tiger Woods! Is the world really shocked that yet another athletic is allegedly cheating on his wife?! off the top of my head, I can name quite a few that have and were caught; Kobe Bryant, Alex Rodriguez, Steve McNair(r.i.p) and Michael Jordan. I am NOT shocked by this at all. It's practically accepted in our world that these men are going to cheat and their wives *most of them* are going to accept it as long as it comes with a shiny bauble. *ahem* I'm looking at you Mrs. Kobe Bryant. Bryant was accused of raping a 19 year old girl.
I'm sorry but cheating is not acceptable just because a man is rich! In our world though it seems that money is all that matters and can be used to buy forgiveness.

On a lighter note I read this joke about Tiger Woods and wanted to share,
What does Tiger Woods have in common with a baby seals? They both get clubbed by Norwegiens.

hahahaha!!! * I don't think animal abuse is funny, but a pretty little model beating up her cheating hubby is!!!*

Tis the Season for...

..gifts and greed, family and fights. It's so worth it tho. I love Christmas. It's my favorite time of year. I love the chilly mornings and Christmas lights. If only it would snow in Texas.

Being a momma is busy.

I'm sorry I don't blog more often. I don't always have use of my laptop. The BF uses it for downloads and job searches often. So, I HAVE to share. A lot has happened lately, nothing major however, beside baby mielstones.

My son is now 6 months old, he can sit up, hold his bottle and say hi. I'm in awe at how fast he is growing.

I'm also going back to school in January*pending aid comes through and everything* to get my cda and become a childcare center director! Yay!

I'm so excited for Scout's first Christmas and C and mine's 2nd together. Hope everyone is doing wonderful.

Happy Holidays... I'll write again soon. I swear. :P

Two in One.

I wasn't able to blog yesterday so I'll be giving you two for one today. I'll talk about a recent news event and share a craft project and/or recipe.

New Flash: I just read the story of a model, Filippa Hamilton, being fired because she was "overweight". This is not something new in the modeling world. However, they continued to use the model's image but not before photo-shopping her into a strange stick figure. What message is this sending girls? How low will the next generation's self-esteem be? The model in question is a gorgeous thin girl. Why turn her into something that looks like a breeze would knock over. Ralph Lauren should be ashamed by their actions. I'm jealous of Ms. Hamilton in her other photos. Yet, in the ad by RL I want to adopt her and feed her cheeseburgers.

Recipe of the week:
Chicken-and-Cheese Enchiladas

Ingredients
1 small red onion, halved
1 1/2 pounds tomatillos, husked and rinsed
1 to 2 Serrano Chile peppers, stemmed and seeded
1/2 cup low-sodium chicken broth
Kosher salt
Pinch of sugar
8 corn tortillas
3 cups shredded rotisserie chicken
2 1/2 cups shredded mozzarella and/or Monterrey Jack cheese
1/3 cup fresh cilantro
2 tablespoons extra-virgin olive oil, plus more for greasing
3/4 cup crumbled queso fresco or feta cheese
Directions
Preheat the broiler. Slice half of the onion into thin rings and set aside. Place the other onion half, tomatillos and serranos on a foil-lined baking sheet and broil until the vegetables are soft and slightly brown, 7 to 10 minutes, turning as needed. Transfer the vegetables and any liquid to a blender, add the broth and puree. Season with 1/2 teaspoon salt and the sugar.
Meanwhile, stack the tortillas, wrap in a damp paper towel and microwave just until warm and soft, 1 minute; keep covered. Toss the chicken with 2 cups shredded cheese in a bowl. Spoon a portion of the chicken mixture down the middle of each tortilla. Add a few cilantro leaves and roll up. Place the enchiladas side by side in a lightly oiled 9-by-13-inch baking dish and brush with the 2 tablespoons olive oil. Broil until crisp and golden, 3 minutes.
Pour the tomatillo sauce over the enchiladas and top with the remaining 1/2 cup shredded cheese. Return to the oven and broil until the cheese is bubbly and golden brown, 3 to 5 minutes. Garnish with the onion rings, queso fresco and any remaining cilantro.

Disclaimer. I haven't personally made this dish yet. As soon as I do I'll add my own review. I'm dying to make it tho.

A Baby's Story

About a year ago this week I became an aunt. My little sister gave birth to a beautiful baby boy. The entire family was thrilled. We were all under the spell of this little blue eyed boy. Then I found out C and I were excepting our first baby. We were all stunned and happy. I had a fairly easy pregnancy until the end. I developed pregnancy induced hypertension. I had to stop working and was on light bed-rest. For my safety and the baby's the doctor induced; after about 18 hours of labor I was taken in for a c-section. The little monster was born and everything was OK. We were released from the hospital and sent home to figure this whole mommy and baby thing out. About 2 weeks later I was super sick and admitted to the hospital. My c-section was super infected. (I'll spare you the details.) I was in the hospital for about a week with around the clock antibiotics. I almost died from the infection. My doctor couldn't believe how bad it was. However, I was lucky and recovered from the infection fairly quick. I had to stop breastfeeding because of the medicines. The little Monster is doing well and goes for his 4 month check up on Wednesday. I love being his mother. I am amazed by how much I love him and how wonderful he is.
